Speaker based surround sound main advantage is quality.
That quality comes with a few caveats, proper equipment, setup & many wires.
Starting with "cheaper" equipment might not be worth all the effort and you still have all the wires.
Soundbar tech has come a long way and much more convenient and as you said you may not tell the difference or whether it's worth the hassle.
Many people find soundbars provide a good enough surround sound especially minus the hassle and wires.
If you consider it, I would suggest not bothering with an "Atmos" soundbar.
It's in name only and just a selling point.
They don't really offer the true benefits of "Atmos".
Just like your thinking with speaker system.
Start with the cheaper versions and if you find it satisfying and satisfied with the sound you're good, not wires to boot.
