I am not impressed with the receiver. It is not perfect that is for sure, But for the price it is quite the deal. I love Denon but the next closes thing is the X3800h that does 8k and only has 105 watts (versus 120 watts Pioneer) and you have to pay $229 to get the Dirac Live license.

I have multiple Denon and Marantz receivers from 2016 and 2017 and they handle Dolby Atmos from streaming devices just fine.
Lossless Dolby Atmos or DTS:X would come from Blu Ray and 4K Blu Ray players and even then they don't need HDMI 2.1 either as they max out at 4K 60hz for video which your Onkyo can handle.
Apple tv4k can stream lossless audio
