I'm gonna go ahead and grab one of these. I already have an 8" chef's knife and 4" paring knife, both from the Victorinox Fibrox line, and I like them both a lot, especially the chef's knife. However, reading through the reviews - which are great, btw - it seems that while Victorinox calls this a chef's knife, it's more of a utility knife with a shallower, thinner, lighter, more flexible blade than their 8" or 10" chef's knives have. I suspect I'll still grab my 8" knife most of the time, but I'd like to give this one a try.

*edit* btw, the 3rd party price on this is generally in the $20-25 range, so this isn't a great deal, but it's still a bit lower than usual. I'm jumping on this because I'm now thinking about it, not because it's suddenly at a great price.

This quite regularly goes to $19-21 on sale. Years ago it used to go as low as $14 - but that was pre-pandemic. So yeah, this is basically the low price these days.

I bought a 7" fibrox santoku 15 years ago and it's my favorite knife that I use everyday. Excellent quality for the price.

I got both this and the 8". The blade seems a tad thinner on this one, it's kinda like a hybrid utility chef's knife. Sometimes I actually prefer using this one when chopping veg and stuff because it feels a lot lighter.

Been using this for last few weeks and it's a good lighter knife option. Used it for cutting veggies and grilled chicken and has done a good job.

Can someone recommend a good quality, inexpensive sharpener for this knife?

They don't get any simpler than this; results are surprisingly good for an otherwise well maintained knife. It won't resurrect a knife from the dead though.

This is not as complex as it looks.

The Dalstrong Quantum I posted a couple of days ago was the best deal I've seen since everyone seemed to be clearing out the Zwilling Four Star 8" for $40 late last year. 8.5 or 9.5 inch chef knife from BD1N steel for under $60. That one's dead though.

https://www.amazon.com/Cangshan-5...B01BMTJ7FQ

I'd buy that in a heartbeat if I could think of any need I'd have for it. Sixteen bucks with the 20% coupon.

Still on the fence about this one. The blade looks fantastic, but the handle looks positively awful.

This one is more comparable to the OP knife as an all-purpose knife. And like the Victorinox, this is where you want to go if you prefer to put your knives in the dishwasher.

Damn they sell shoes, knives. What don't they sell. I avoid dealing with this business. Nothing good comes out of Passaic nj. This knife looks good. I don't know anything about the brand and what steel they use. i don't expect much for $20.

Huge Victorinox fan. They're a great "mid-range" knife for people who cook often but don't necessarily need or want knives 2-3x this price.

This mini chef's knife is probably my most used knife in the kitchen. Works really well for just about any task without needing to break out the full size chef's knife. I love the fibrox handles too. Very grippy, even when wet.
