With sim racing rigs, anything that has a bar in the middle, like the Playseat Evolution, is poorly rated on the sim racing subreddit. I have no first-hand experience, but I always see comments saying how uncomfortable it is.
However, for anyone who wants to look into it, Woot has the non-pro version without Red Bull branding for $100 less than the one shown in the OP, so $250.
That seems like a more palatable price point, though I don't know what it usually goes for. If you're at $350 though, you may as well just get yourself a proper aluminum profile rig.
The seat is always what makes them so damn expensive so the slickdeal way would be to get an aluminum profile rig and a nice car seat from a junkyard for less than $50, which would be a lot more comfortable anyway.

The Playseat Revolution is a better design because the post is attached to the seat, between your knees instead of between your feet. So you don't have to fumble with wrapping the post as much. Not sure why they discontinued it.
Aluminum rigs aren't for everyone due to the real estate they take up, but I agree on the price-to-quality point.
