Having had both these and high end Japanese knives, the Victorinox chef knife is probably the best for almost everyone (unless you are single and never have family or friends over who will use your Miyabi on a ceramic plate and then toss it in the sink). They are really sharp, and easy to sharpen, and you don't cry when they get chipped. That said, I have the 6 inch and it's probably my least used knife, too small for general meal prep and overkill for paring fruit and the like. The 8 inch is amazing.

Mine is about eight years old & easily sharpens back up to usefulness with nothing more than the honing rod. I expect it will last a couple decades more at least. My mother still has a perfectly usable Forschner knife she picked up at a yard sale in the early 80s.

Victorinox Kitchen knives, imho of caring about kitchen knives for about 2 years, seem to be a good value. Good performer, not much to look at. Their texture handles are ugly to look at are great for grip. I would consider these good entry level knives, in my very humble and limited opinion.

Normal price is about $30, and within the past year this has sold for $26. Pretty decent deal, and I've had good experience with Victorinox knives.

I paid $20 for this knife 1.5 years ago. $20 well spent. Great little multi purpose knife for when I don't want to bring out an 8 inch knife. Retains edge well enough using just a honing steel. Would recommend

Good deal was $20. I'd say prices have gone up so $21 is a good deal now.

I agree, the handle is nothing to write home about but it does allow it to be placed in the dishwasher. Probably not the best practice but since it is not wood, that is an option. I've had 2 of these for at least 6 months. They are still razor sharp and my go to knives. They are a little thin so they flex a little but it's not so much that it makes them unsafe.

I would recommend this knife for $21 and would say that it should last at _least_ a couple of years. I'm expecting it will last me 5+ years as I have 2.

Wow prices did go up. I remember the 8" fibrox chef's knife being in the $30 range when I got it in the mid 2010s but now I'm realizing that was a decade ago. Looks like those are around $45 these days, so I'd say $21 for the 6" is pretty good if you're looking for a budget entry level chef's knife.

Can someone tell me if this knife is really lightweight? I prefer something heavy. I have a couple of Shun knives; they are great, but they need a lot of care.

Note that is only 6 inches which IHMO is too short to be called a chef's knife. The size makes it more of a utility knife routine kitchen tasks. Its nice to have a knife like this around and given that is can go into the dishwasher is a plus.

it is very light. Mainly as the handle material is just plastic. The blade is thin and slightly flexible but I would say not enough to be dangerous or difficult to use.
