With ATT, the sim is activated and account is created when the phone is shipped/ready for pick up, so you will have your account info for cancellation before you get the phone and you have to call to cancel the account/service to avoid getting charged.
With Verizon, the sim is NOT activated and account is NOT created when the phone is shipped/ready for pick up, so you won't have your account info until you putting the sim in use, so technically there's nothing to cancel if you just throw away the Verizon sim and you won't get charged at all. By putting the sim in use only to get a number for cancellation is NOT necessary.
Please correct me if I'm wrong.

2. anything else i should know?
All the porting, activating, cancelling, etc seems confusing.
Or is it more simple than it seems for someone starting from scratch for either carrier?

The easiest way is get a new number with Verizon then cancel the service after pickup the phone. Then you can pop the T-Mobile sim in or transfer the esim which I did. Hope it helps to clear your confusion!
