Don't get this. Get the one with a hood that you can use while cooking, this one is not rated for cooking (cover while cooking)

The manuals recommend not covering for more than a few minutes while cooking, even with the hooded omnivore model, to avoid warping. To answer your question you could melt cheese on a burger faster in that time frame. The hood is definitely more convenient in my experience though. But the price difference for that convenience is a personal choice. But for me a Blackstone is a convenience purchase. Super easy to use and cleanup. The hood just flipping down afterwards adds to that. Hard top does take up slightly less vertical space than the hood if that matters to you.

Good deal on a great grill. All the benefits of the more expensive model for a better price. You really don't need the hood.

Even though they are benefits if a good you can always just get a SS grill cover. I think blackstone even sells one.

I only use my hood when I'm not cooking for storing. My mom has one without a hood and we had to buy a hood and it wasn't cheap.

We have a Blackstone without a hood and regretted it because dirt blows onto the griddle surface.
