so right now what does he eat on a typical day?
Foods El Jay will eat (i.e. put in his mouth, successfully chew, swallow and keep down):
Breakfast: scrambled eggs (sometimes plain sometimes with pureed black or pinto beans), french toast (heavy on the egg), waffles with protein powder, organic cereal with rice milk
Lunch: all natural deli meat, PB&J, plain pasta
Dinner: plain red meat (steak, ground beef - I grind my own), plain chicken, sometimes fish depending on the kind, plain pork roast or chops
Fruits: bananas, pears, sometimes mango, sometimes kiwi, watermelon like a mug!
Veggies: green beans, he will eat the baby food pouches of sweet potato/green beans/peas but won't touch them whole. He literally gags if he puts it in his mouth.
Picky child due to sensory issues + dietary sensitivities/allergies = a quandary when I play the "what's for dinner" game.

Have you tried not using processed meats? I'm assuming the deli meat is processed.

Trust me, I am there right now. Tried for 20 years to "help" J. Guess what?!?!?! He is the only one that can help himself and unfortunately, he does not care to.

Almonds, including almond butter and oil - salicylates
Apples - SUPER high in salicylates
Apricots, fresh or dried - SUPER high in salicylates
Artichoke, French - won't even think about touching
Asiago cheese - dairy allergy
Asparagus - says they are "bisgusting"
Aubergine (eggplant) - could try
Avocados, including avocado oil - has texture problems, gags when he tries to eat
Bananas (ripe only with brown spots on the skin) - ok
Beans, dried white (navy), string beans and lima - ok
beans properly prepared
Beef, fresh or frozen - sometimes enjoys
Beets or beetroot - throws up when he attempts to eat
Berries, all kinds - SUPER high in salicylates
Black, white and red pepper: ground and pepper - too spicy

Black radish - what the heck is this?
Blue cheese - dairy allergy...plus I am sure he would say is stinky!
Bok Choy - won't try
Brazil nuts - possible

Yep, I have surmised that I am pretty much farked when it comes to his diet!
What I do with my kids is give them a giant plate of something that I know they won't like. They say they don't like it. So I tell them they just have to take a couple bites and then they don't have to eat anymore. They think they are pulling something over on mom when they aren't. The thought is that they will eventually like it.
Why so many cheesecakes?
That's just his thing. I think his job is stressful at times and making cheesecake helps him unwind. His co-workers reap the benefits. He mention he didn't have anything to do this weekend or next. I mentioned that next weekend is Cheese Fest (yes this is Wisconsin) He happened to look it up and they are having a cheese cake contest. So he is entering that.

But what you said reminds me a lot of my MIL, and it's not that she doesn't know what she's doing because she does the same thing. It's that she's manipulative, and she's been using that tactic against my bride and my oldest since the day i met her. They both think she doesn't know what she's doing, but she does. And the reason she keeps doing it is because it makes the recipient try harder to identify emotionally with her and do what she wants them to do.
You're a lot closer to this than i am though so i may be completely off base. i just wanted to advise you that my MIL does the same thing and she knows what she's doing.
