I'm just finishing up x2 32 channel NVR and I load it up with 20TB each for storage.

Your firmware (program) that controls your recordings are installed on the board itself and not on the hard drive.
To replace:
1. unplug the power cord from the unit. Disconnect all cameras from the unit.
2. unscrew all the screws that holds the cover onto the unit housing. Screws are at different places for each manufacturer.
3. Ground yourself. Make sure you have no static charge before you touch any of the internal components.
4. If your unit is dusty, get a dust blower and blow the dust out.
5. Locate the drive, carefully disconnect the connectors behind the drive itself.
6. Unscrew brackets that hold the drive down. Remove and replace with new one.
7. Do everything in reverse order to put the unit back into use.
8. Plug everything back in and turn it on and resume recording.
Some units you may have to "initialize" the drive for first time use. Sometimes it's ready to go when you turn it on.
