You can pair it with DDR4, even 3600 cl16 in gear 1 pretty much matches any DDR5 out currently. Buying a Zen 3 CPU currently unless you already have an x570 or B550 is pretty silly. The DDR4 MSI z690 board for $210 is all you need to get pretty much all the main features too.
Why would anyone be wasting money on a perfectly reasonable build around DDR4? Not everyone is running the latest and greatest so upgrading into DDR4 makes a ton of sense for value-oriented builders.
DDR5 is not a huge upgrade right now and you could easily go with DDR4 now and wait a couple of years before jumping into a mature DDR5 ecosystem...
