But with regard to rusting, in most cases, rusting is usually a matter of operator error, rather than a defect in the product. Iron rusts easily, especially when in contact with water, even more so if it is acidic. You have to be careful not to scratch the cured coating, you shouldn't leave it sitting in the sink, and you must dry it off right away after washing and rinsing. The plain fact is that many people DON'T take care of their cast-iron pans properly.
