Since you already have a discrete GPU, going to 5700G does not make sense. Also 5700G is PCIe 3.0 not 4.0.

I was looking for low tdp . I would not be doing any encoding and no VMs. Just install normal Ubuntu , docker and get the things in that. I don't know if Ryzen integrated CPU would support transcoding like Intel does ( worst case if someone is transcoding) . I cam currently running Intel 2 nd gen which handles 3 streams (direct play) bottle neck when a 4K video is played .

Would a 5600x or 5800x be a big jump over my current 2700X? And would they run fine in my X470 motherboard? Or would I need to upgrade that, too?

They will run just fine and be a nice jump over your 2700x. You will have to update the bios on your MOBO before you use the new CPUs with it though since it's a 470.

I would also recommend the 5700x over the 5800x 95% of the performance for roughly 2/3 the price

For those wondering if they should upgrade their 2xxx series CPUs:

I think its worth it. I installed a 2700x when they were expensive, and deeply regretted it. It's OK if most of your work if video editing, or other tasks that can use all the CPUs.

But even for things like photoshop, and especially for gaming, even the 3xxx series is much faster. And the 5xxx series is much faster still. And the 7xxx series is going to require equipment you don't have. So I think the 5xxx series the sweet spot to upgrade to.

1600 is going for around 60-70 on ebay. After fees and usps first class shipping, youll get $49-$59 back.

The cost to upgrade is very cheap. I would go for the 5500 as it is significantly better than the 4500 for $20 more.
