I gathered some links for you to get a better understanding of what I'm seeing from the bigger more reputable reviewers that I know of:
Quotes for cliff notes:
"The Ryzen 5 5600 is also basically a 5600X-killer — it doesn't make sense to spend the extra cash for such slim gains". - Tom's hardware
"The Ryzen 5 5600X is only 2.1% faster—almost exactly the same number as in application performance tests. Even processors like the mighty Ryzen 5800X and 5900X are only 5% faster." - Tech Power-up
"...we're looking at on average a 1.5 to maybe 3 percent range of difference...our opinion not worth it..." - Gamers Nexus

Getting apu make sense when you don't have the parts at the time of the build but its a compromise in the long term because they made 5600g so much different than 5700g
Would wait for upgrading platform or cheaper 5700x or above
Your 6600xt isn't bottlenecked by the cpu at 1080p so no need for changing it
Was looking for something like this. I'm building a computer for my son's 10th bday (October) and have been doing the whole song-and-dance of finding parts early/justifying purchase now/assume things will be cheaper later in the year.
