It has a heavy clear-ish polyurethane or something on it, I tried sanding mine off and the coating was tough as nails. I ended up using a plane to fix my sanding mess and get it down to wood. I would not use it in a kitchen even after that because I don't know what they used to glue it all together.

That's what I'm using it for. It's not a food-safe coating, so I plan on not preparing food directly on its surface. I don't want to go through the trouble of removing an already strong and waterproof coating.
