How dare you – I am without a doubt going to commit the consistent time and effort required to progress from a beginner, to intermediate, to advanced pianist, and will in no way fall off after two weeks when I get tired of feeling like I'm not getting anywhere and look at the digital piano in my living room with resentment every time someone comes over and says "You never told me you played piano! Play me something!"

There is a Roland DP-10 which I see for 54 on Amazon, not cheap to me. I have the M-Audio SP-2 I bought a long time ago, it is $25 on Amazon. Cheaper still is the Donner DSP-003 at $13.99. These are all similar form factors and like a real pedal, not like the one that came in the bundle. If you look at any of these on Amazon you'll see some other ones a few bucks cheaper from no-name companies that might be fine. I can vouch for the M-Audio one as being good. You'll want one with a polarity switch. If the polarity is reversed then it will be as if the sustain is on when the pedal is not depressed. Different keyboards may use different polarities, so the switch lets the pedal work with any keyboard.

appreciate you! what's different between the pedals you mentioned vs the stock one? why is the stock one not a "real pedal"? also - is a pedal even necessary for someone brand new to piano? can you recommend any resources for a brand new beginning to learn?

I'm not a piano player, I picked this up for my kid who has been taking lessons and using keyboards without a real piano-style keybed. We started with one of those keyboards that has the lighted keys, and used the on-board songs. Then we started using https://www.synthesiagame.com/ to learn some more songs. This is a fun and easy way to learn some songs, without having to learn to read music. If you enjoy playing and want to become more advanced you may want to sign up for lessons. Actual piano teachers probably don't approve of lighted keys and synthesia, but I think for someone starting out it way more fun and less intimidating than using sheet music.
The bundle comes with 90 days of Pianote, an online lesson site. I haven't tried this yet but it seems oriented towards beginner to intermediate players. You should have gotten this if you registered the piano online, and is probably worth checking out.
