edit - for reference, I went with the 7800x3d processor ($350) and Asus Tuf 4080 super ($999) - 5% credit card discount.
Gaming only= wait for a deal on the 7800x3d
Gaming + productivity= get this
Correct?

Kind of. Yes on the gaming side but this the 7950x (non-3D) so it won't perform as well as the x3D counterparts but will excel more at productivity tasks that don't benefit from the 3D V cache vs the 7950x3d. It's still a high end CPU and probably won't be the bottleneck of your system vs your GPU.
If just for gaming, put that $475 towards a new GPU before ever upgrading the CPU.
Both the 7950X or 8950X will also have much higher cooling needs than your 7600, so you'd have to consider if you need to update your cooling too.
I am using 7950X3D and 7950X with air cooling single tower Deepcool AK400. It never exceeds 45 Degree C at idle and 70 degree C during game. This gen CPU is super efficient and cooling is not an issue for the top tier Ryzen 9, even for the 7950X without 3D.
the next cpu's will probably debut at around 700 (amd may have theirs discounted a few months after that by 50 or 100 for a special sale-- the 7950 x3d had that but i would say they probably made too many and realized it)
the difference "from my understanding" between the 7000 series and the... honestly i think the desktop is going to be named 9000 series ... is only supposed to be roughly 15 percent, while the next leap will be coming from the line after that which will have some sort of big-little arch

This. I imagine we'll see some great discounts on current gen parts to push out the rest of the stock before Zen 5 launches in Sept/Oct. Rumor has it we'll be looking at a pretty significant bump in performance (25-30%).

I would get neither deal nor next gen unless you are actively bottlenecked. Zen 5 desktop will mostly be AVX performance increases so if you know you use that instruction set then you'll upgrade. For gaming switching to X3D proc is the ticket.
