You need to catch up, there is a new version, the Encore ESP that is made for espresso.
Oh, I am up to date...Breville acquired Baratza, and this is a 'refresh' of their line, starting with the Encore series...the ESP is the M2 burrset I installed on my OG Encore, and I too tweaked the grind range to crank out spro, which IT CAN DO. However, it is now trying to be a multi-function grinder (at the starter level) and as such it begins to weaken it's own strengths...it loses some drip/pour grind range to do some mediocre espresso range. Again, if you intend to explore espresso, you will want a better grinder than the Encore series. There are a ton of decent, low-cost grinder offerings within $100 of the Encore ESP that will stomp all over it for espresso. Get a small atomizer spray bottle from Amazon, fill it with distilled water, spritz your beans with a spray before grinding them. It's called the Ross Droplet Technique. Eliminates the static electricity that causes the issue and also makes the flavor better. I haven't cleaned a single coffee ground off my counter since starting this.

I upgraded my OG Encore with the M2 burrset, effectively giving me a Virtuoso...speed of grind was the first major upgrade, reduction in static was the second, so it's not surprising what you see with your V+.

I replaced both the cone burr and carrier, so they matched in age and break-in. The upgrade makes the Encore what is should have been all along (hence why they now have the ESP model). I performed the upgrade using Reddit notes and Youtube vids, such as these:
Some have claimed they were able to forgo complete disassembly on a new Encore, as the burr was still loose from the factory...long term usage seem to fuse the burr to the shaft.
This is a tedious upgrade but if you are a tinkerer and want to maximize the Encore platform, this is the way. Some feel it's not worth it, since there are better grinders in the price range for espresso, and the time/money upgrading is better spent on a true grinder upgrade.
