If you think this will be 50 clicks and work forever, that isn't how this goes. Knowledge about your specific router/firewall, NAS, and just some normal nerdiness are required.
If you want to invest 10 minutes in the setup, expect this to need to be connected to the internet and use their privacy-sucking app.
I'm obviously cheap. I have the required skills to do what is suggested. I already block a number IoT devices from all internet on my home networks, but I've reached the point in life where I'd rather spend the money to get devices that work out of the box in the way I prefer. In general, if they require of Alexa or Google or Apple cloudy services, I'd rather spend my money elsewhere. In general, I consider my "down time" to be worth $100/hr. If tweaking something cheaper will require too much time, then I'd rather just avoid the problems from the start.
There are ways around CG-NAT filters. The most common is to have a VPS running a VPN like wireguard as the server, then have your home network connect as a client out to that VPS. Then you can run whatever internet servers you like, just forwarded from that public VPS down your VPN pipe using something like haproxy to forward either straight TCP traffic or HTTP/S traffic, https://theorangeone.ne
