The combos aren't impressive. I mean a 7900gre is always available at $550 so it's paying retail for the gpu and the 370 for the cpu. Maybe the monitors are a good deal, but not the GPUs. It's all retail plus $370….
7900x3d is the better balanced by technical specifications.
Here's a very simplified rundown of the 3 big x3d CPUs
7800x3d - 8 Cores / 16 Threads all parked on x3D Cache
7900x3d - 12 Cores / 24 Threads, 6 Cores / 12 Threads parked on x3D cache (generally only these cores will be utilized for gaming), 6 Cores / 12 Threads not parked on x3D cache (suffers from latency, not generally used for gaming)
7950x3d - 16 Cores / 32 Threads, 8 Cores / 16 Threads parked on x3D cache, 8 Cores / 16 Threads not parked on x3D cache
barring that AMD's core scheduling bug got fixed. I believe the 7800x3d performed better than the 7950x3d even though there's no hardware reason it should. Same idea of the bug for Intel CPUs where disabling the E-cores increased performance as there was a bug where the slower E cores were utilized in gaming instead of faster P cores. Disabling E cores forced the games to use the better P cores and improved performance in video games.

Are these really THAT much better for video editing? I'm mostly gaming but also video edit and use programs like sketchup (gaming is priority though). Is there a huge performance delta when it comes to gaming vs editing/productivity tasks?

Generally it depends what you mean by huge as some people consider 1-5% differences that aren't actually even outside margin of error or run to run differences to be massive differences completely warranting picking one CPU over another.
The easy answer is the differences aren't actually massive in any of the processors people are talking about they are all extremely capable processors with no issues gaming or doing content creation or editing and productivity tasks but each does have trade offs that they are better in some categories than others.
I got 7900x last summer and 7900x3d a week ago for around the same price of $330. I think it's a fantastic value. It's half the MSRP and it comes in a sealed box, so there's no doubt that it is new. However I was surprised to learn that my older CPU has 4.7 GHz base clock and this one is only 4.4 GHz.

That's one of the main differences between the X and X3D. The X also uses 50w more power. The X series relies on faster clock speeds and higher power draw. The X3D relies on cache to allow the same or better performance at lower power and lower speeds.
Pretty much all reviews/speed ratings are on 1080p or 1440p to cover up the fact that GPUs have barley advanced in 5 years. Its pretty weird how my 10 year old 1080 GTX runs Fortnite on EPIC graphics in 4k 60~70FPS. 10 years later a 3080 can barley keep above 120fps vsync. 4080, sure its gets close to 200 FPS at the cost of 10 MSRP 1080 GTX. Maybe I should just go play with my E cores. Or is it the Pee cores? Industry is a F'in joke right now. AMD really the only people left for average consumer.
To your point 7800x vs 7900x. There all amazing compared to what the competition is pushing, but if you buy a 7800x because its 'better' for 1080p gaming.. you got sold on lies.
Yeah sure you can sit here any say the CPU is bottle necking but your playing at 1080p with a 4090.. Like it doesn't matter what GPU you have at this point, if you play 1080p your CPU will always show as the 'slow down' because modern computer design is no longer in 1080p.
And production people... like 4k is the only way. Ultrawides were nice little mid-point in technology. 4k res owns ultrawide in everyway.
Preach!! I feeling like I'm losing my mind, I've been pc building since pentium 2 and scsi drives and I've never seen a more BS era than we are in right now. Marketing has always been over the top but it's down right scams and because of most "trusted" reviews come from YouTubers who 1. Make a living off content, 2. Never want to risk not getting things to review from companies by tell too much truth. I tell people people to do the math. You build a $1500-$3000 machine to play a $60-70 game (or free lol to then game in 1080p. A standard from 2008. Cell phones have had 1080p in 2015. It sounds stupid when you say it out loud.
How smooth does a game need to be to enjoy? 1080p on a desk 3gt away look like. Trash. But that's the metric people are being led to spend thousands on…. It's crazy. Pardon me…. End rant
