What you'll need to start:
A stainless steel (preferably) stock pot, at least 3 gallon capacity. Aluminum will do.
A basic brewing kit. Northern Brewer item #7601 [northernbrewer.com]
A recipe kit [northernbrewer.com]. I would suggest a porter or a stout for your first brew, as dark brews are very forgiving of beginner mistakes. I would suggest using US-05 dry yeast.

Belgian Wit is fermenting already. My OG was alot higher than planned. Probably because I boiled off more than prepared for. It was cold outside. The recipe called for 1.051. I hit 1.059.

you can see the magnets glued on
i used plastic spacers between the fan and the case of my tupperware to reduce vibration and to allow a better balance of the stir bar as its the proper distance from the magnet.

its really simple to make, all i used in the making this was the cheapest120mm fan i could buy(i bought a 3spd fan to adjust speeds to get a good spin), a box or tupperware(alot of guys use old cigar boxes and looks really nice), old power cord from electric shaver/xm radio/any thing should work, and i had a really old hard drive that was useless so i took it apart to take the earth strong magnets out of it...you could always buy them online for a few bucks....i also bought a cheap switch so i can turn it off easier... buy four bolts that fit through the corner holes on the fan, 4 nuts that fit the bolts, 4 plastic spacers/washers, then buy a flask or flat bottom glass bottle/jar/etc that can hold about 2L. Buy a cheap stir bar online and you are set.
to build the stir plate cost me about $10, the stir bar was $5.... as i said mine is really ghetto but does the job, i'm not too worried about looks as long as it works Whee

My wife got me the hard copy. I have read through a lot of it. Jeez....there is a lot of chemistry in brewing. I want to do my first batch as an extract. If all goes well, I want to move right into mini-mash.

I tell ya what... DH took a class last January at the local brew shop. He learned more in those 6 classes than he did reading the books. And it lit a fire in his soul and he is addicted. He wants a yeast lab, went full-grain after 2 or 3 extract batches and has graduated to 10 gallon batches with a friend. Hoping to enter his first competition this year.

It's a ton of science - I can't wrap my brain around it but he loves it.

Oh yeah. Water chemistry is very important. pH levels, calcium, alkalinity,etc. I was about to buy a water softener thinking I would be better off. Then, I started reading John and Jamil's co-authored book. Low or no calcium os real bad for all grain brewers like myself. Taking the calcium carbonate out raises alkalinity. That's bad for the enzymes.

brewing can be complexed or plain simple, regardless you can make excellent beer... my water chemistry is very simple, tap water then i add campden tablets to get rid of the chlorimines... i would say brew a few times this way and see if your beer tastes fine... most of the time you will.

The chemistry of the water isn't real important when you are using extract or even partial mash. But, it's extremely important when you go all grain. Also, when you go all grain, your supplies get much cheaper. I buy my base malt and hops in bulk. My 2 row is 75 cents a pound ($1.39 in store) and my hops are less than $1 per oz. ($2-$3 in store)
