What you'll need to start:
A stainless steel (preferably) stock pot, at least 3 gallon capacity. Aluminum will do.
A basic brewing kit. Northern Brewer item #7601 [northernbrewer.com]
A recipe kit [northernbrewer.com]. I would suggest a porter or a stout for your first brew, as dark brews are very forgiving of beginner mistakes. I would suggest using US-05 dry yeast.

I do not think the yeast is inactive. It has been about 3 1/2 days and I am getting bubbling in the primary about every 20 -25 seconds. It seems to have slowed a lot since day 2, but I understand that is normal from the How to Brew book (J. Palmer).
I definitely suggest against adding sugar to the fermenter. If you want a sweeter beer, add it to the boil. But, since you are just beginning, stick to the recipe. You'll be surprised how sweet it is.

Yep. I think I am going to take that suggestion. Make it easy this time. I pulled a FG reading today and it is spot on. Smells fantastic. I am going to put it in secondary tomorrow.

Should end up hovering around 4% ABV. Fairly sessionable.

i have a large homebrew comp coming up in a few months, time to start compiling recipes and brewing Whee i want to get atleast 4-5 entries... obvious for me is an american IPA... last year i didn't place but i scored a 40. I was happy as there were over 100 entries in that category.

2 of my kegs of home brew were finished off at my birthday party. I had my IDA and Wit on tap. Most people didn't like my Barleywine as expected. So, I still have a 1/4 of the keg left. Time to brew some more! I think I'm due for a DIPA. Maybe with some honey?

for a DIPA i wouldn't use honey, or if i did it would be very small amount... Honey is highly fermentable but it still does leave some residual sweetness...and DIPA's need to be dry. Definitely try it, but go light on the honey...

Yeah, that's my intention. I've done some looking around on some Hopslam clones. I'm going to try it. I like that residual sweetness with a ton of hop flavor.

What's funny is that people assume that Hopslam is 100+ IBUs. So, they load up on bittering hops. Actually, it's only upper 60s or so. I may only have a small amount of bittering hops. But, I'm going to overload on the Centennial and Simcoe in the last 20 minutes.

Hey Matt / Mav, good to see you guys are keeping this thread alive. Lifes been way busy and brewing has been on hold for over a year now Frown

Matt, did I read correctly a few pages back that you're thinking of jumping ship on Stone? If you don't mind me asking, why? The pay not up to the work load, or is it too industrialized? Which brewery you getting offers from? Sadly I still haven't had a chance to take the tour at Stone, I did manage a quick peak into the gift shop a couple months back but that's it.

i have a very solid offer at another awesome san diego brewery that is growing into a building the size of stone...offered me a job to build their packaging lines and then manage them... though at stone i have a very high probability of getting a sanitation and packaging supervisor position.... so i am weighing out my options....

right now i am on a rotating schedule, every month is a different shift... right now i am on graveyard, in a week and a half i will go to 9am(or 5am), then the month after that i go to a 1pm....it could be tues-sat shift or sun-thurs shift, and if you are really unlucky you get thurs-monday...its really hard for my wife, so i am looking for something that pays better and a structured job position.... though i do love what i do...

Yikes, that sounds rough. I'm sure that makes things a little fairer and might increase comradery as everyone gets stuck on the crap shifts every now and then, but that must make it pretty lousy to schedule a life around. I wonder how deep they were in their mugs when they designed that system.

I'm sure in the long run you'll make the best decision, To mix metaphors, do your best not to burn bridges when/if you jump ship.
