In addition to what others have said... the dual handles allow this to be gripped more easily with two hands, making it less strenuous to maneuver for someone who is elderly or has wrist problems.

This style can fit into a smaller oven because it doesn't have a handle. It is easier to center in a oven.

In for one. I have no idea what to use it for but I will try to use it to grill steaks, korean kalbi, and grill calamari in it on my indoor stove top. Got the 10 incher as I like em big.

I am thinking about getting one and use it as a Korean bibimbap bowl. But this one seems quite shallow. Will the 9" lodge wok a better option for that?

Honestly, I'd say the 10" might even be a little small for some people. Lodge had a sale on their site before Christmas, so I got some stuff, including the 10" pan. I took it out of the box and... I'm in the market for the 12" pan now too lol - which looks to be on sale as well. The 10" is nice, and good for one or two people, but you'd probably have to batch a full family meal with it.

Cast iron works great for Korean bulgogi as that meat tends to steam when cooked (which is a bad thing IMO), but you can actually get some crisp to it on the cast iron. As for Kalbi.... IMO it's better cooked over a fire (on a Kamado Smilie)

1. lol what? Don't need to wash it? Do you understand how bacteria growth works? Lodge has a video on their Amazon page about how to WASH the pan after using it. Personally I use soap on mine. It cooks like a beast.

2. You don't need to reseason if it you wash it, but I don't think your definition of reseason is correct anyway. Edit: Lodge's definition of reseasoning is just oiling the pan after you wash it. That's not reseasoning either but I'll allow it since I do that.

3. People go seriously high and mighty on the cast iron train. Lodge includes all the info you need. The internet just has a masochistic hard on for cast iron.

these smaller pans are great for burgers because it keeps the fat right up against it so it fries better.

i would not use one for a ribeye because you want to flip the steak to the opposite side of the pan which will be hotter than the part that has been in contact with the steak.

also keep in mind that the measurement is at the top of the pan, the bottom is smaller due to the sloped sides. ribeye might not even fit.

Boneless, yes it should fit one, def not two. If you buy bone in ribeye, probably questionable if it would fit, likely not. I have a 10" that I often cook 2 boneless Ribeyes in, side by side. Perfect fit, still enough room so they aren't steaming, which you want to avoid.

Many people sand them down to an ultra smooth finish, then re-season, end up with an almost glass-like finish. Enough scraping with a metal spatula will get you close to there over years of use regardless.
