I prefer 5400 rpm. Less noise and heat. Still plenty fast to max out a 1 gbit LAN connection.

We'd need someone to shuck and confirm with more recent drives.
I've seen threads on Reddit where people have confirmed 5400 rpm on 7200 rpm models.
My recent WD external purchase (14TB) was a white label helium that spins at 7200rpm. Even so, it's at least as quiet (if not moreso) than the 10TB 5400rpm it replaced. Very impressive and a concern when purchasing, as my home media server is in our office.
Having said all of that, the 14TB external drives had at least 2 different internal drives shipping in them. I got a variant that didn't do PWDIS (no 3.3v mod necessary) and was very quiet, but others apparently got a drive that DID support PWDIS and was a little "chatty".
It wouldn't surprise me if the 18TB externals also had different internal variants.

Unless you need an enclosure for some reason, but if you are going to shuck the drive to use it NAS, I think Golds are better

As with many things, both/either can be the right choice depending on your needs.
The Enterprise internal drives are "better" if you want to guarantee what you are getting, need a (on average) reliable drive with a long warranty, and don't mind something that might be louder and a little more power hungry and hot.
The WD externals (normally white label helium drives) are "better" if you don't mind any of the variants that might show up in the enclosure, are fine with the shorter warranty and (again on average) less reliable drive, and want something a little more efficient, quiet, and cool-running.
In my case, I feel like any data someone cares about should be backed up. The warranty is meaningless to me and I have backups should the drive fail. I'd rather pay less and get the noise/heat/power benefits inherent in a more "consumer-class" hard drive.
