2. Get another number for data ONLY. Switch to the cheapest you can find every a few months. You are always a new user because you don't need to port in your number for it.

I have thought about this also. It works very well this way in India physical dual sim phones are standard . But in usa which phone model has dual slim slots ? Not talking about physical esim combo.

I saw someone suggesting to avoid them. So just wondering if the lack of wifi calling is the only thing to consider here.
Edit - For example, does WhatsApp work with GV? I didn't think so.
The additional call/text plan is of course at a cost ($5~10 per month), but you also don't need to get worried about things going wrong when porting your number. If the two lines are on different networks, you also have a better chance of still having network access in rural areas. Overall, I'm happy with paying that.
