Whatever scaling you use for 32 inch you will end up using more on 27.

For the ppi on 27" and 32", its 18% more (163 ppi vs 138 ppi). But I think you really need to be about 12" away to notice the better density. I sit about 24" away and can't tell the difference (though I am nearsighted).
Between a 27" and 32", I think a primary consideration should be the depth of your desk. With 27" a 24" desk works fine. But for 32", I think you want at least 29" depth. With some monitor arms, this would help with a few inches as well. I prefer my 32" with monitor arms on my 29" desk, so this puts my working distance around 29" or so.
