I'll speak up. I had an 8GB M1 that ran perfectly. Anything I threw at it, perfectly. I did all the basics and some pretty tame image editing. Gave the laptop to my dad a year ago, no complaints from him either.
I think the right way to think about this is.. 8GB is fine for most people. If you know you need more, then you already know you need more, but don't be FOMO'd into buying more if you don't have a specific use-case that requires 16GB. You'll be fine.
