Use a double broiler.
I liked the NuWave better as it seemed to have a bit more precise temperature control. However the Insignia works fine once you get use to the power settings. It does a great job heating up the pots and pans fast and is reliable. Like most induction cookers it's a little noisy but it typically goes away when I walk in the next room.

Edit: I check temps with an infrared laser sensor
I bought this the last time it posted. I used it once and my cast iron griddle heated very quickly and I was impressed. However, the second time I attempted to use it, the plug arced and the LCD errored out with a voltage irregularity code. I returned it in-store.
