I'll speak up. I had an 8GB M1 that ran perfectly. Anything I threw at it, perfectly. I did all the basics and some pretty tame image editing. Gave the laptop to my dad a year ago, no complaints from him either.
I think the right way to think about this is.. 8GB is fine for most people. If you know you need more, then you already know you need more, but don't be FOMO'd into buying more if you don't have a specific use-case that requires 16GB. You'll be fine.
The browsers were running cpanel and wp and chat gpt & Canva if it makes a difference.
It runs great, I think I was running Mozilla too as I needed a browser logged into a different account.
pros of yoga, touchscreen, significantly larger storage, better graphics processing for gaming, cpu better for certain multicore x86 workloads (if you don't know what I mean by that, the mac cpu is probably better for you). higher RAM falls into that category, but if you actually go over the 8gb on the mac it will overfill into a dual ssd setup. Again, probably only a hindrance if you are doing high computational multicore workloads for long periods of time, which frankly if you're in that boat neither of those laptops are a good option.

I've had the Air M1 base model for over two years. I moved from Windows. It's been great, but I am a light user -- web browsing, word processing, not much multitasking. My girlfriend runs a business, multitasks with some memory-intensive programs, including video rendering, running 3D printer, a ton of Chrome tabs open, etc. When she got an M2 Macbook Pro with 16GB of RAM (the great Costco deal from earlier this year), it was a huge difference. She didn't realize how much the Air M1 with 8 GB was slowing her down.
I think the Air M1 is still a good computer, but not for heavy, memory-intensive use. And it's unclear how long Apple will support an almost four-year-old computer with OS updates.
Cheers.
