But do I think this MacBook is not a good value? Absolutely not, it's a very good value. Most people won't need more than 8GB of RAM. And this includes me. But let's not forget the fact that Apple is using a base model as a decoy to get people spend another $200 for RAM and $200 for additional SSD upgrade. This is nothing but a power play and f word to its customers. More RAM does nothing but makes the system snappier and faster. Right now my Dell PC (with two actively used profiles) sitting at 62% out of 16Gb of RAM. And these are all Chrome tabs.
In other worlds, Apple should absolutely include minimum of 12GB of RAM. But I know it won't happen, and we all know why

You can get a refurb m2 for $849 from apple, which will get you the newest redesigned body.
And the latest m3 costs $1099.
Personally I'd go with the apple-refurb m2 minimum, just from the standpoint that it looks more modern, has a faster chip, and will probably maintain its resale value better.

My brother has an older one of these and he can no longer update the OS, which will end up being a problem soon, as it makes the computer less secure.
They ask for no verification that you are an student
It's -100$ of normal price of MacBook and the include 150$ gift card, making the total around 750.
Where can you use the giftcard? Is it like a Visa gift card you can use anywhere? Or do you have to use it at Apple stores? (much less valuable then, if you weren't planning on buying anything at Apple).
8 GB is going to be fine for a lot of people.
Maybe not for gamers. Maybe not for people who use programs which work better & faster with a lot of RAM.
But if you surf the internet, use office software (Libre Office, Microsoft office), watch videos, etc., 8 GB will be fine.
If you like to have a lot of browsers & less memory intensive programs open, and switch between them a lot, 8 GB generally still will be fine.
If you keep a lot of browser tabs open, browsers now have a setting that will "sleep" browsers that are not currently being used; that reduces the memory demands from the browser. If you don't turn this on, you can run into memory problems.
It can help to reboot your computer occasionally (set your browser to remember the open tabs if that's important to you).
If you're a gamer, 8 GB may not be enough for you.
Like said NUMEROUS times already, if you know you have a need for a laptop with more storage or more memory, get that version. Don't buy a 2 door truck and complain it doesn't have enough seating.

So $900 then a $150 gift card.

I don't think you would not buy an iPad iPhone or AirPods in the next few years

I know plenty of people who would never buy anything from Apple Store, including me. And will not buy an Ipad, Iphone, or Airpods in the next few years. Not everyone is interested in Apple products, or spending lots of money on expensive consumer products.
But, all the best to you!
